We are only human, and unlike the animals that graze on the green green grass, we have advanced technologies that have led us to a wide range of different foods, textures and flavours, which brings us to sauce.

Using different sauces on our plate play an important role in maximising flavours, and improving the true flavoursome feel of a dish. You can’t just have a piece of southern fried chicken dry - you need some BBQ sauce to give it a complementary and contrasting flavour and pure taste bud euphoria!

Sauce is a French word taken from the Latin salsa, meaning salted. The oldest European sauce is ‘garum sauce’ ; this was fish sauce used by the Ancient Romans. In the 3rd century BC China was using the soy bean creating soy bean paste which is mentioned in the book of Rites of Zhou.

Historically in the UK and over Europe sauces were used to mop up any leftover drippings on meals as meat was expensive and reserved for the wealthy. The juices used from meals were stored and turned into over meals such as broths and soups.

Getting more advanced, sauces were then used to create foods like black pudding, or even blood pudding from using spices and sauces, this would mask the flavour of old or flavourless meats. Fast forwards a fair few decades this lead to people creating sauces as a side and to serve alongside meals.
